Elaine M. Koontz is a registered and licensed dietitian in the state of Pennsylvania, and is a graduate of Seton Hill University located in Greensburg, Pennsylvania. Elaine is currently employed as a Dietary and Nutrition Services Manager at a rehabilitation hospital, and has previously worked as a pediatrics and obstetrics dietitian. She has been published in Plus Magazine, Vibrant Life magazine, Skirt! magazine, the Erickson Tribune, the Dominion Post newspaper, and the savvygal online magazine. Elaine is equally interested in the clinical and foodservice aspects of the profession, and enjoys writing about all aspects of food and nutrition. Outside of her chosen field, Elaine has a far-reaching litany of interests, including everything from economics and business to sociology and psychology. She is also working on two fiction novels and a series of personal essays.
When Elaine is not working or writing she enjoys cooking/baking, spending as much time as possible with her family, reading, laying on the beach, attempting to make art, and practicing yoga.
