Famous Leicestershire Cheeses


Red Leicester may not be as well known as Stilton cheese, but nevertheless its highly versatile qualities and creamy taste often labels it as "a cheese for all occasions." Red Leicester dates back to the Middle Ages and it's bright orange colour distinguishes it from most other English cheddars. A higher moisture content also accounts for the fine melting properties of this cheese.

The Properties Of Red Leicester

  • Aged : 4-6 months
  • Taste : Creamy, with tangy overtones
  • Texture : Flaky to crumbly
  • Beverages to serve with : Sherry, Burgundy and most ales.

One of Red Leicester's great properties as previously mentioned, is that of it's versatility. Due to this, it is possible to incorporate the cheese into recipes for breakfast, lunch and dinner, so take your pick as I offer you a whole day's menu!

Breakfast Casserole

A delicious baked egg, sausage and bread casserole will make this a fantastic start to the day.

Ingredients

  • 8 large eggs
  • 2 1/2 cups of milk
  • 3 cups of bread cubes
  • 1 tsp of mustard powder
  • 2lb of fresh sausage (sausage meat)
  • 1lb of grated Red Leicester cheese
  • 1/2lb of fresh mushrooms

Method

  • Brown the sausage in a skillet and drain off the excess fat. Set aside.
  • In a large bowl, beat the eggs, then add the milk, mustard powder and bread cubes plus a pinch of salt to taste.
  • Leave for a few moments and allow the bread cubes to absorb the mixture.
  • Stir in 80% of the grated cheese.
  • Add the cooked sausage, mix well and then pour into a 3 quart casserole dish.
  • Slice the mushrooms and arrange on top of the casserole.
  • Sprinkle the remaining grated cheese over the top and bake for 45 mins at 350 F.
  • Allow to stand for 10 minutes before serving.
  • Serves 6-8 people

Lunch

Creamy Macaroni Cheese

A classic favourite, especially for the kids

Ingredients

  • 2 cups of elbow macaroni
  • 1/4 cup of flour
  • 1/2 tsp. of dry mustard powder
  • 4 tsp. of pepper
  • 6 Tbsp melted butter
  • 3 cups of milk
  • 3 cups of grated Red Leicester cheese
  • 2 Tbsp of grated onion
  • 1 tsp. of Worcestershire Sauce
  • 1/2 cup of fine dry breadcrumbs

Method

  • Prepare macaroni and drain
  • Blend flour, salt mustard and pepper into 4Tbsp of the melted butter
  • Slowly whisk in the milk
  • Cook over a low heat, stirring constantly until thickened
  • Add the cheese, onion and Worcestershire Sauce and heat until the cheese is melted, stirring occasionally
  • Combine with the macaroni and transfer to a 2 1/2 quart casserole dish
  • Mix the breadcrumbs with the remaining 2Tbsp of butter and sprinkle over the macaroni.
  • Bake at 350 F for 30 minutes or until the top is golden.
