Lesson 1: Food Preparation

Meat

Meat can contain deadly bacteria called e-coli. When handling meat, there are certain precautions that must be taken to avoid contaminating other food.

Remember to:

Wash counter tops, chopping boards, knives and any other utensils that raw meat touches.

Wash your hands thoroughly after handling raw meat of any kind.

Never use a chopping board, spatula or knife that's been used to prepare meat for anything else until it has been washed in hot, soapy water.

Always keep meat in the refrigerator.

Always cover meat that's being stored.

Always store meat on the bottom shelf of the refrigerator. This stops it from accidently dripping onto other foods.

If meat drips into the refrigerator, clean it up immediately.

Never serve undercooked meats to avoid ingesting e-coli bacteria which can make you very ill. E-coli is always present in undercooked or raw hamburger.

Never refreeze meat once it has been thawed, unless it's been cooked. This can cause salmonella and other food poisoning.
