Lesson 4: SOUTH INDIA

Introduction

In this lesson, students will learn the background of South Indian foods and prepare several signature South Indian dishes. No books are required, but Chandra Padmanabhan's Dakshin: Vegetarian Cuisine from South India is highly recommended. If you wish to prepare the recipes, many ingredients can be found at your local supermarket or use the Web sources previously mentioned. A research trip to a local Asian market, if possible, is recommended. Recipes are included for people who wish to sample Southern Indian foods and for more adventurous folks who like to try new ingredients.
