Lesson 3: NORTH INDIA

Introduction

India is the world's second-most populated country, with almost a fifth of the world's population living on the subcontinent. Bounded on the north by the Himalayan mountains, on the northwest by the Hindu Kush Mountains, and with the Arabian Sea to the west and the Indian Ocean and Bay of Bengal to the east, India's landscape and climate vary widely.

India is a country with teeming millions, who claim membership in many different sects and religions, including Buddhists, Sikhs, Parsis, Muslims, and Hindus, each with their own particular food regulations and taboos. Over the entire country there is a definite cookery style, although within the nation there is a range of variation from place to place.

In this lesson, students will learn the history of Indian foods and prepare several signature North Indian dishes. No books are required, but Madhur Jaffrey's World-of-the-East Vegetarian Cooking is highly recommended. If you wish to prepare the recipes, many ingredients can be found at your local supermarket. A research trip to a local Asian market is highly recommended.
