Dumpling Drop

Another quick bread discussed in “The Best Quick Breads” is dumplings, featured on pages 246-258. Dumplings are almost like biscuits that are cooked in boiling liquid, often soup or milk. Throughout Europe there are different ways to make dumplings, and they can include meat, vegetables, different kinds of flour and other ingredients.

I must admit that I’ve never made dumplings. I never thought of them as bread, so I haven’t experimented with them, but they are a great comfort food. If you’re into making homemade soup or like to experiment with ethnic cooking, these simple doughs should certainly be in your repertoire.
