Hello there.Seafood enchiladas have been part of old california cuisine for a long time.I would never think of using "imitation crab meat"in the recipe!Surami("imatation crab meat")is,in my opinion,a foul fake food.Use real crab meat,this is supposed to be a special occasion,luxury dish.If real crab meat is out of the budget,bay shrimp can be substituted-just drain them well and dry them on paper towels.

Thanks, Bert. Frankly, my husband and I love imitation crabmeat! And, the seafood enchiladas that you get at Chi Chi's contain imitation crabmeat, as well. These probably would be good, though, with real crab and/or shrimp.
