In scribbles, there was a recent influx of tofu recipes. We thought they might be better hashing it out in a discssion forum, so here goes...

» sahajmarg - Tofu Kartoffelkuchen

This is a good recipe for children because you can "hide" the tofu!

Mix together:
8 medium potatoes, grated
1/2 lb tofu, blended
1/4 cup fresh parsley, chopped fine
1 large onion grated (I use less)
1 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
3 Tbsp unbleached white flour

For each pancake, brush a 6" skillet with oil and heat to medium heat. Spoon about 3/4 cup of the potato mixture into the pan and flatten to 3/8" - 1/2" thick. Fry about 5 - 7 minutes on each side or until golden brown. Serve hot with applesauce on the side, or top with sour cream.

Thanks for pointing the discussion in this direction!

Tofu is certainly one of the staples in the vegetarian meal plan, but it should be part of everyone's diet!
