Oh that tamale class sounds great! I've seen the guys on tv do the dessert ones, and have been dying to try them! Dave has a friend who wants to come to dinner soon, so maybe I'll do Mexican and try out some of the sweet treats as well smile

I did try that caramel sauce recipe that I posted at Christmas... if anyone uses it, use real butter and real whole cream, not half and half... mine was thin and the margarine separated on the top. But it still tasted good - I served it on cobbler! mmmmmmmmmm smile

You have certainly given us lots of choices, Darlene. I grew up on beans and cornbread, so this hits right to my heart.

Thanks Jerri! I actually get tired of beans and cornbread in the winter months, but after a long, hot summer, I can't wait for cold weather to have some of my favorite bean soups!

We had snow when I woke up this morning, so the first thing I did was break out the crockpot smile Tonight we're having chili and we're trying out a new cornbread type recipe...

Corn Spoonbread

2 cups milk
2 cups chicken stock
1 1/2 cups cornmeal
3 cups fresh corn (I'm using canned)
6 eggs, separated
1 teaspoon hot sauce
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon black pepper
1 cup cheddar cheese, grated
1/4 cup flour
1 teaspoon baking powder

Preheat oven to 375 degrees. In a large saucepan over medium-high heat, bring milk and stock to a boil. Reduce heat to low and slowly whisk in cornmeal. Cook, whisking often until smooth and creamy, about 5 minutes. Stir in corn and set aside to cool.

In a small bowl, whisk together egg yolks, hot sauce, garlic, salt and pepper. Add yolk mixture and cheese to cornmeal mixture, stirring well. Sift together flour and baking powder and stir into batter. Whip egg whhites until soft peaks form and fold into batter. Pour into a greased 9x13" baking pan and bake 45 minutes to 1 hour, or until toothpick comes out clean when inserted in the middle.

Sounds good, eh?

It's rainy and cool here today, so we're going to have red beans and rice smile I like to cook them all day, to! I remember my father-in-law came for a visit, and he loves black-eyed peas, so I cooked some up for him. He was munching down on 'em and looked at me and said, "How long did you cook these beans???" I was so worried he didn't like them, grimaced and said "All day." He looked at his wife and said, "Told you they should cook for more than an hour!" smile hehehe That reminds me that I need to get my crockpot out now that it's cooler, too!
