Darlene, where's the link for your broccoli casserole recipe?
I've been faking it so far but thought I should look at some actual recipes before serving it to company on Thanksgiving Day, as requested. smile
Wasn't decided on "doing" turkeyday at first. Then last Saturday I changed my mind.

I had turnip greens and smoked hog meat simmering on the stove for a nostalgic family supper, sweet potatos baking in the oven, the sweet ice tea was made, and all the ingredients for cornbread were at hand.
The floor was swept clean of doghairs and the table cleared of unpaid bills.

There was time to sit and catch my breath before my guests arrived... after a very busy day, so...
I wanted to light all those fat new candles with names like Serenity, and Aromatherapy Stress Reliever, pour a glass of wine and pretend to be serene and civilized for about 15 minutes...

Damn, the wine bottle had a cork in it! I hunted but all the beercan openers with corkscrews attached rusted away years ago.
There were old black&white westerns playing all day on tv so visions of banditos breaking off the necks of bottles went through my head....naw, I'd have to wear shoes to keep from getting cut on slivers of glass.
I wondered if I could get it out with a drill bit?
nope, I was too puny to pull it out so I decided to hammer it down in the bottle with a big ole screwdriver and a hammer.
yowie! when that 4 inch long cork hit the liquid, red wine splattered everywhere! me, the countertop, and the floor.

I did sit down for a few minutes with candles that smelled like cheap soap and wine that needed some sugar in it, in my opinion.
But I don't think the "being civilized" part took hold.

And when my guests ruefully apologized for spilling things because of their shaky old hands..I got the silly giggles and told them they should have seen the mess I made before they got here and would they like to have a glass of wine instead of tea with their turnips.

I know I can handle turkeyday and enjoy it, but next time I'll get the really, really, cheap wine that comes in a bottle that looks just like the bottle the cane syrup is in. I can twist the cap off with pliers and it don't need sweetening.

The other wine can be used to marinate tomorrow's venison roast, with lots of garlic.

OMG Plox! I love you! That's the best laugh I've had in forever, and I've done the hammer and screwdriver wine-opener trick, so I had a great visual to go with your story!!

Before I forget, here's the broccoli casserole... I use all store-brand ingredients, and it's too good smile

Broccoli Casserole

4 cups water
2 cups rice
1 bag frozen broccoli
1 jar cheese whiz (yes, cheese whiz!)
1 can sliced water chestnuts
1 small jar pimentos (optional)
1 can cream of mushroom soup (more or less)

Bring water and rice to boil, then reduce heat, cover, and simmer on low for 20 minutes or until all water is absorbed. The combine in a casserole dish with the remaining ingredients and mix well. Bake at 350 degrees F for 30 minutes (or until thick and bubbly).

For some reason, this mixture never turns out exactly the same, so I adjust here and there, add salt, lots of pepper, and usually some garlic powder because I'm addicted to it smile

I hope you have a wonderful Thanksgiving! I was all fired up to do it in my new house this year, but I've decided to bake some pies and take them to my mother-in-law's house. I've got lots of fresh pumpkin pie filling from my very own garden, and other than that, I'm going to sit on my behind and even make the teenagers do all the dishes after smile

In 2 more years, my birthday will fall on Thanksgiving, and I'm going to make everyone come here. By then, the whole house will be all fixed up just the way I like it, and I'll want to bribe everyone with food to make them come tell me how gorgeous it is smile

Have a great night!
Love & Hugs,
Dar

I like the ingredient list for your recipe, but I leave out the chopped onions and add a layer of canned fried onion rings on top at the last minute.
Sometimes I use "Cream of Whatever I have", but other times make the blending sauce with butter, flour, and milk.

» SarafromSODak - Oeufs Crevettes

We will have these for Thanksgiving brunch. We used to have ButterBraids, but they don't sell them any more, just as fund raisers.

Oeufs Crevettes

For each serving:
1t butter
3 or 4 shrimp
1 egg
Salt and pepper
1T cream
1T Swiss cheese, grated

Melt butter in ramekin or custard cup. Add shrimp. Break egg over shrimp. Season. Pour on cream and sprinkle cheese on top. Bake 400 degrees, 8-10 minutes, until set to desired doneness.

We also make a casserole out of it by multiplying to use in a baking dish. I would say a dozen eggs for a 9x13 dish, baking for at least 25 minutes. You can leave the eggs whole or whip the eggs first and then mix with the other ingredients.

We really like this dish. We use it as a special meal.

I'll then use a Suzanne Somers kit for turkey, mushroom/sausage dressing and cranberry sauce. It is sugar-free and lo-carb. A litlle honey baked ham. Probably have a jello salad, Schwans sweet potatoes, olives, pickles, buns, and green bean casserole. Or I may try the brocolli dish listed here.

Have a good one.

» mastiffs2005 - Sweet Potato Pie Recipe

In response to Re: Re: Oeufs Crevettes posted by bjj1245:

That Idaho man better stay away from my sweet taters! LOL

Here's a Sweet Potato Pie recipe that Lisa posted when she hosted this topic - it sounds pretty darn good smile

Supreme Sweet Potato Pie

This recipe makes two pies and you will be glad it did!

Ingredients:

8 oz. softened cream cheese
1 ¼ cups sugar
2 eggs
1 16 oz can yams, mashed smooth
1 12 oz can evaporated milk
1 tsp ginger
1 tsp cinnamon
1 tsp nutmeg
OR substitute 3 tsp pumpkin pie spice for spices
2 9-inch deep dish pie shells
2 cups pecans, chopped
2/3 cup brown sugar
4 Tbsp melted butter

Using an electric mixer, beat cream cheese and sugar together until fluffy. Add eggs, yams, evaporated milk and spices. Pour into pie shells. Bake at 425° for about 30 minutes until filling is set. Remove from oven.

Mix pecans, brown sugar, and butter together and sprinkle on top of baked pie. Return to oven for about 7 more minutes until topping is golden and crisp. Cool completely before slicing. Serve with dollops of whipped cream.

I think I'll try this myself smile Oh, and I'll bet that broccoli casserole recipe is great! The chix in a biscuit must add a great taste to it!

Love & Hugs,
Dar
