» mastiffs2005 - More pumpkin recipes...
Y'all remember that pumpkin and apple butter I made a couple of months ago? Well, I was wondering if you could use pumpkin butter instead of pureed pumpkin, so I tried out some recipes. Here's what I came up with:Spiced Pumpkin Bread
2 eggs
1 cup sugar
1 cup oil
1 ¼ cup pumpkin butter
¾ cup apple butter
1 tsp vanilla
1 tsp cinnamon
½ tsp nutmeg
¼ tsp cloves
1 ½ cup self-rising flour
1 cup raisins
1 cup chopped walnuts
Grease and flour one loaf pan or four mini loaf pans (this makes a great fall gift!). Preheat oven to 350 deg F. Whisk eggs and sugar until fluffy, then gradually mix in oil. Add spices and vanilla, and blend in pumpkin butter and apple butter. Stir in flour, half a cup at a time. Then fold in raisins and walnuts. Bake for about an hour or until firm and brown. Toothpick inserted will come out clean. This can also be topped with cream cheese icing.
I sold 20 mini loaves of this last week, so it must be good stuff LOL
Pumpkin Butter Pie
1 9” pie shell, unbaked (I used that no-roll recipe)
2 eggs, slightly beaten
2 cup pureed pumpkin
¼ cup apple butter
1 cup sugar
1 ½ cup milk
1 tsp vanilla
½ tsp salt
1 tsp cinnamon
½ tsp ginger
¼ tsp allspice
¼ tsp cloves
Combine all ingredients and pour into pie shell. Bake at 350 deg F for 40 minutes or until set. (Oh, about halfway through cooking, I sprinkled some chopped walnuts over the top) ![]()
See ya'll later ![]()

In response to message posted by DarleneCheek:Thought I'd put in my 2 cents worth and counter with a savory, dinner pumpkin roll. These are to die for,a gorgeous color and can be served with any hearty dinner:
4 teaspoons yeast
1/3 cup warm water
1 1/3 cups canned pumpkin
1 cup milk, warmed
3/4 cup sugar
2 teaspoons cinnamon
1 1/2 teaspoons ginger
1 teaspoon allspice
2 teaspoons salt
2 1/2 tablespoons vegetable oil
1 large egg
6 cups flour, all-purpose
1 large egg, slightly beaten
Dissolve yeast in the the water in a small cup or bowl.
In a large bowl, combine the pumpkin, milk, sugar, salt, spices, oil, and egg. Blend until smooth.(I use a standup mixer for this with the beater attachment).
Add the yeast mixture, 2 1/2 cups of flour and blend until smooth.(I now change to the dough hook).
Continue adding flour and mixing until the dough can be handled and comes away from the edge of the bowl, (may not need all the flour - you want a soft dough.). Knead 4-5 minutes, and then turn out into an oiled bowl. Cover and allow to double, about 1 - 1 1/2 hours.
Punch the dough down, rest 10 minutes, and then form into rolls. Arrange the rolls, touching, on a baking sheet and allow to rise again for 45 minutes.
Brush the beaten egg on top, and bake at 350 for 30 minutes or until an instant thermometer measure 200 degrees.

» biogardener - Using up pumpkins
I wrote an article about some basic principles of using pumpkin in cooking, explaining why some people, including me, have digestions problems with it. The article also talks about my earliest recollection of eating pumpkin in my mother's homemade pumpkin pickles. I have never seen them made by anyone else, but they were a favorite with my family. Here is the article:-- posted by biogardener
