I wrote an article about some basic principles of using pumpkin in cooking, explaining why some people, including me, have digestions problems with it. The article also talks about my earliest recollection of eating pumpkin in my mother's homemade pumpkin pickles. I have never seen them made by anyone else, but they were a favorite with my family.
