Y'all remember that pumpkin and apple butter I made a couple of months ago? Well, I was wondering if you could use pumpkin butter instead of pureed pumpkin, so I tried out some recipes. Here's what I came up with:

Spiced Pumpkin Bread

2 eggs
1 cup sugar
1 cup oil
1 ¼ cup pumpkin butter
¾ cup apple butter
1 tsp vanilla
1 tsp cinnamon
½ tsp nutmeg
¼ tsp cloves
1 ½ cup self-rising flour
1 cup raisins
1 cup chopped walnuts

Grease and flour one loaf pan or four mini loaf pans (this makes a great fall gift!). Preheat oven to 350 deg F. Whisk eggs and sugar until fluffy, then gradually mix in oil. Add spices and vanilla, and blend in pumpkin butter and apple butter. Stir in flour, half a cup at a time. Then fold in raisins and walnuts. Bake for about an hour or until firm and brown. Toothpick inserted will come out clean. This can also be topped with cream cheese icing.

I sold 20 mini loaves of this last week, so it must be good stuff LOL

Pumpkin Butter Pie

1 9” pie shell, unbaked (I used that no-roll recipe)
2 eggs, slightly beaten
2 cup pureed pumpkin
¼ cup apple butter
1 cup sugar
1 ½ cup milk
1 tsp vanilla
½ tsp salt
1 tsp cinnamon
½ tsp ginger
¼ tsp allspice
¼ tsp cloves

Combine all ingredients and pour into pie shell. Bake at 350 deg F for 40 minutes or until set. (Oh, about halfway through cooking, I sprinkled some chopped walnuts over the top) smile
