I have found that the casserole comes out better if you cover it while it cooks for the first 30 minutes and then uncover it for the remaining time. Also, it comes out better if you use a glass dish instead of a metal non-stick one. Don't know why that is. I'm guessing because since I spray non-stick spray in it first, that it browns it more on the non-stick one and I don't like it so brown.
