Lisa, I have to say that Carrot Cake is one of my all time favorites. My boss makes one for me every year on my birthday. Mmmmm, I do love that cream cheese frosting though. :O The Mississippi Mud cake sure sounds like one I'll have to try. I'm a chocoholic. ;-)

Actually, those really are probably my two favorite cakes and I'm not even a big fan of marshmallows--but there is something about them when they're all melted in the chocolate...so good.

My carrot cake recipe is very rich. It is a pretty oil heavy cake. I actually made one yesterday and I cannot leave it alone! You know, I just keep taking tiny slices of it every time I walk by the table! :-) LOL
