Hi Lisa, just wanted to let you know that the mac and cheese was a big hit. smile I messed up the biscuits though as I fogged out on the part about using room temp beer. Next time I'll remember to take it out the day before. Shrimping season just started so I'm looking forward to trying the Gumbo next.

Just a thought for folks who have even less time than it takes to use canned biscuits in chicken and dumplings.... My grandmother switched from using biscuit dough to using flour tortillas that she cut in strips. They made great dumplings. She swore that they were better than the ones with biscuit dough. I can't swear on the comparison, but they were good.

I adore fried squash. :-) But I must say I've come to enjoy it baked a little bit more. Summer squash or crook-neck squash is one of my very favorite vegetables.

Since frying foods is such a big part of southern cooking, I'm plannig to do a few articles on chicken-fried steak, fried chicken, fried veggies and so on. We'll have to get the Crisco out! :-)

The only sad part to Southern Cooking is that well, we tend to have fattening food, but boy oh boy is it yummy!

My hubby loves chicken fried steak but sshhh... I've never fixed it from scratch. I'll be looking for that.

Fried chicken. Well if that isn't a southern staple well then neither is gravy. It's one of my family's favorites but I really think my fried chicken could use some work, so I'll be watching for that one too.

Ok I have eaten squirrel stew and it was ok but not as good as rabbit stew. I must say I have never eaten possum stew though. One of my cookbooks has a recipe for bear stew.

Yup, the biscuits are a little trickier for sure. smile I miss my old gas stove as the new one seems to take longer, and I have to lower the temp in the oven some. Hopefully, I'll get used to it soon.

I also had a recipe in an old Boy Scout book for Bear Stew. I guess there aren't that many bears here in the hot, humid south, otherwise we might be coming across some "Chicken-Fried Bear" or "Bear Gumbo" recipes.
