In response to message posted by recipe_addict:I found this while browsing around today and figured I'd add my 2cents to the country fried steak discussion.
Here's how I do it:
Take your minute steaks (the flat, round kind-of-steak with holes poked all through it)... coat it on both sides with seasoned meat tenderizer - I use the brand from the dollar store... Let that marinate for several hours. When I'm fixin' this, I put the tenderizer on it first thing in the a.m. and then cook for supper.
When you're ready to cook it, dip in egg and then dredge in all purpose flour. Heat about 1/4" of oil in a cast iron skillet, and fry the steaks, turning frequently, til brown on both sides. Remove from the pan and set aside. (Remember, they're minute steaks - so they cook pretty quick. Once they're brown, they're good and done.)
Toss 3-4 tbsp of flour into the grease and make a rue... then pour in about 2 cups (more or less) of milk and whisk quickly... turn your heat down to medium-low and simmer til thick, whisking frequently. Add about a tbsp (yes, a tbsp) of black pepper (course is better) and stir in. Pour this over your country fried steaks, and be sure to serve with mashed potatoes and green peas... oh, and biscuits 'cause you don't wanna waste any gravy LOL Maybe serve some sliced tomatoes, too ![]()
Hope ya like this! Minute steak is as close as we can get to true country fried steak.
