A question about the skillet for the fritatta -- I don't have a 10" cast iron skillet, only a 12". I have several other stainless steel 10" skillets. Thanks for the wonderful comments. About your question regarding the skillets...Generally the manufacturers of your skillets will note whether the skillets are ovenproof. If you know the manufacturer of your skillets, you can check their Web site for product information or if they have a toll-free number, you can call the number to see if they can provide you with that information. I certainly would not put any pan that has Teflon or any other non-stick coating in the oven. Some stainless steel pans are ovenproof (Kitchenaid touts their products as being oven safe) and can be used in the oven. But again, that's the Kitchenaid brand. My advice would be to check with the manufacturer of your skillets. -- posted by Michael Vyskocil
