I had the same problem. It turned out I was using the microwave portion of the oven. Just a quick hint. Drop the temp by at least 25 degrees when cooking with the convection. I don't know what oven you have but with ours these are the steps we take to use it.

1. Press the convection button
2. Select the temp you want, remember the 25
degree rule.
3. Put in the amount of time to cook, usually the
time is around the same you would normally use
to cook in a regular oven.
4. Press the convection button again.
5. Press the start button. The oven should now be
going through the pre-heat stage. When it's
ready, it should beep you.
6. Put the food in and hit start again. Now your
cooking.

The first time we cooked with ours, we cooked a roast that was cooked the whole time on pre-heat, didn't come out well at all. Burnt to a crisp.
When you get it down, the food comes out great.
