You've tempted me! That cake looks so good! I've not tasted Madeira. Wish you could give us a sample taste. But alas, guess I will soothe myself with just visiting the links.

Thankyou both for the encouragement. Researching the Honey Cake recipe now - just keep watching this space.

I have tracked down the song - see my new article link - so with a little bit of luck the cake recipe should not be far behind.

Maybe there's someone else out there with an authentic recipe?

There is a honey cake recipe in THE FOOD OF PORTUGAL: Jean Anderson, Hearst Books 1986, page 274 - 275. Honey cake is not made with bee honey, mel da abelha, but rather molasses, mel da cana. The recipe says that it keeps well in the freezer if well wrapped... not in my freezer!

Yum! That's even better. Thanks for the note. Guess I'll have to check out the book now.

Note: I just ordered the book from my library. What a great service the Suite offers. So soon I'll get some Madeira and make the cake!! I'll let you know how it goes - I think it probably needs to age, so you may not hear from me until after the holidays.

» jerrib - I made the Ginger Cake recipe

in Jean Anderson's The Food of Portugal cookbook. It is to die for! It's made with Madeira and spices and is well worth the effort to make.

It's served at the Reid Hotel in Funchal, Madeira. I can see why. Thanks for introducing me to Madeira and to this cake. I get to share it with my family for the holidays now!

Happy Holidays, Anne!

Jerri, you are wonderful. I have, as you see, collapsed over Christmas as usual. I shall gloss over my Christmas culinary failures and just revel in the joy of your success.

Have a great Christmas and really happy New Year.

Annie
