Do you make juice then let it ferment? I know you said you don't have a recipe, but what is the method?

I have used various methods. Sometimes I start with juice from a juicer which I put in big bottles. Sometimes I start by packing the fruit into gallon jars, adding sugar or honey to cover it and letting it sit. I find that the results are better if I keep it in my cold basement. The longer it takes, the better the result.

There are lots of books on making wine, but I don't bother with them. They all require too much fuss.

This sounds like something I may want to try in the future. Fruit vinegars intrigue me. Now if I could make balsamic vinegar I would be in heaven (my newest favorite cooking ingredient).

Once you get a fruit vinegar you place some herbs into the bottle and then add the vinegar. I do it all the time. I do the same with my virgin olive oil or organic canola oil. All my vinegars and oils are flavored. I grow the herbs anyway.

Right now, I am cutting up piles and piles of apples, because they are all ripe now, and apples are the only fruit trees which are guaranteed to be hardy here. I fill them into gallon jars and then cover them with sugar. I used honey previously, but I don't have a ready source of honey at the moment. It is selling here faster than it can be produced. That is the recipe for liqueur, but if I am not careful, it will be vinegar instead. Either way, I will be happy to use it. Last year's was fabulous. I still have some around. Every bottle of it is different, because it contains different fruit.
