What a fantastic project! One of my favorite subjects.
If you're considering an intro level course on mythology,I would have to say that the beginning is a very good place to start. Myths, their origins, mechanics and interpretations, are such a vast subject that it should be approached with an ear to previous knowledge and exposure. The Greek myths seem to be the easiest to "get one's feet wet." The Norse, Celtic and Asian are more daunting for the casual scholar.

One course I took was especially rewarding as I traced creation myths. Another track is the hero myth. Both of these can be compared gracefully through classic and contemporary literature and film.
