Sorry I didn't answer, but Alan gave the answer I would have, Madhur Jaffrey. I don't do any Indian cooking but several on the Chile-heads list have sent in recipes and recommended cookbooks by Jaffrey.

I'd put in a vote for Julie Sahni, too. I lived in India at one time, and developed a real love of that cuisine. Julie Sahni's "Classic Indian Cooking" has been a valuable and much used resource in my kitchen ever since.

Mahhur Jaffrey's Indian Cooking is good. But let me recommend two other great ones. Omana Jacob's Indian Cuisine, written both in English and in her own language. What I really like about this (paperback and only 10.00 bucks) is that it really explains the spices and the unlocking of their secrets.

The second steal for me was 'Great Indian Dishes' (a 6.00 hardback at Costco!) by Rafi Fernandez, not as many recipes perhaps but she is a teacher and her book shows step by step processes all too often left out of cook books.
