Thanks for presenting the bleu-cheese dressing as something to dip into later. "On the side" has saved several dishes for me in my life.

Maybe this is related to the old "Scoville units" discussion, but is there a table of equivalency for name-brand hot sauces? I like Frank's but we buy & keep Tabasco. I think a 2-oz. bottle of that might open up sinuses a little faster than 2.5 oz. Frank's - but I don't know.

Is there a Hot Sauce Institute or something?

I checked at Chilegod,http://www.chilegod.com/ and Tabasco is rated 3 peppers and Frank's is 2 1/2. He rates all the sauces and has an extensive database, so if you have a question about one you can search 3 ways.
