You got that rite, humidity is something down here!
Another great article that tells it like it is!
Now here's my recipe for beignets for those who can't get down to Nawlins!

Beignets (French Quarter donuts served at Cafe DuMonde)

5 cups flour
2 tbsp baking powder
1 tsp salt
1 tbsp melted butter
2 cups milk
oil for frying
confectioner's sugar

Sift 4 cups of flour, baking soda, & salt into large bowl. Combine milk & butter in separate bowl and beat until well-mixed. Add liquid ingredients to the dry mixture a little at a time & work into a soft dough. Use remaining flour to dust dough and board on which you'll be shaping the beignets.
Divide dough into sections about the size of your flattened hand and about 1/8" thick. Pour 1/4" of oil into skillet or frypan & bring to about 350º, then fry each piece of bread until golden brown on both sides. Place on paper towels or clean newspaper to remove any excess oil. Dust with confectioners' sugar.
