Hi! I'm not sure if this is helpful or not, but I make a baklava recipe which calls for rose water in the syrup. I was able to buy rose water at a local Middle Eastern deli. A little goes a long way!

I've used rose water for baking, but I'm not sure how it compares to rose syrup. Similar... but not as thick or as sweet. I'd bet a teaspoon of rosewater in 1 Cup of simple syrup (1 C water and 1 C sugar, boiled) would make a good and simple rose syrup.
