Bob! This is so funny that you should suddenly write about sweet potatoes. Just yesterday , my gardening assistant and I were talkiing about how BORED we were with what we mindlessly eat (decent stuff, just BORING) during our busy season when nothing else seems important other than the gardens we work in, and it's too early for eating straight from the garden. Suddenly Michael starts talking about sweet potatoes and how he had them recently as FRENCH FRIES and how incredibly good they were. We both puzzled that if we LIKE them so much, why don't we ever BUY and fix them?

I must say I have them all stuck to Thanksgiving like most folks in the U.S., but your recipe for the stir fry sounds incredible! You're saying to dice them raw and they'll cook in 5 minutes in a good hot wok! Sounds good to me!

I find myself in food ruts frequently. I'll have to try sweet potatoe french fries. sounds wonderful.

I enjoy stir fry, I think you can cook just about anything that way, if you cut it up small enough. You don't overcook and kill the enzymes.

It's not just you who's been thinking about sweet potatoes! I bought two giant ones yesterday with baked sweet potato fries in mind.

They are a house favorite as they have so much more flavor than most potatoes.

Now, I've gotta try your stir-fry recipe! Thanks for the inspiration!

I think that sweet potatoes are more versatile than most people realize. We get used to eating foods in a certain way and don't often experiment or substitute.
