» TreasuresPlanted - Another Tip: Packaging Meat

I buy the larger packages of meat to get a better price, then I repackage it once I'm home (or soon after). I cut up the larger package into one-meal sizes (usually 1lb for us), and put them into Ziploc bags. I then label the package with the contents and the date, then put them in the freezer. When I'm ready to make a meal, I am able to defrost just the exact amount for that meal....which is much safer than defrosting and refreezing the larger package. Sometimes, since my cutting board is already messy, I will take this a step further and cut the meat into smaller pieces for a specific meal....for example, small steak pieces for beef stroganoff. When it's time to prepare the meal, I don't have to get out the cutting board again and worry about contaminating the kitchen counter again. I just defrost the bag in the microwave, then plop the meat into the pan. I don't even have to touch the meat!
