This is such a misunderstood fruit/vegetable. My husband won't touch it, but it's one of my favorites.

Try tapioca as a thickener in sweet desserts.

This is very interesting, Jenn. I didn't know that people have died from eating the leaves. It's probably a good thing that rhubarb is so tart - it may discourage people from eating the leaves. We had rhubarb growing wild in the back yard when I was a kid. I loved strawberry rhubarb pie!

Thanks for reading my article! I enjoy researching some of the tidbits in these articles. And I am new to rhubarb, hence I figured Jerri's and Pat's recipes are better than anything I could throw together. Plus they both are good! Mmmm! Mmmm! Mmmm!

We don't have rhubarb plants where I live now - I miss it. Perhaps I will look for some in the grocery store and make a crisp; the suggestion makes my mouth water, Jen!
