with maple syrup and wheat germ, topped with sesame seeds. I think I'll substitute some carrot for zucchini next time - also am printing out your recipe to try. Sounds good!

I like juicing carrots as well as other veggies and fruit. I package the pulp from the juicer in 2 cup sizes and freeze them ready to use in muffin recipes. That is a great way of using up the juicer pulp.

Here's the recipe:

Jerri's Zucchini Bread

3 eggs
1 c. oil
1 c. sugar
1 c. brown sugar
2-1/2 tsp. maple flavoring
2 c. grated zucchini (I use a blender)
2-1/2 c. flour
1/2 cup wheat germ
2 tsp. baking soda
1/2 tsp. baking powder
1 c. chopped walnuts
1/3 c. sesame seed

In a large mixer bowl add everything but the sesame seed. Blend until mixed. Pour into two greased and floured loaf pans. Sprinkle with sesame seed.

Bake at 350 degrees for one hour or until done (a toothpick comes out clean). Cool ten minutes, remove from pan.

Note: Yes, I really do just put it all in the mixer bowl at once! I love cutting steps and this bread is delicious just as I described.
