Wow! You've certainly done your homework on onions. I was looking for Walla Walla Sweets on your list (I'm a Washingtonian) and sure enough, you listed them. They don't keep long but are surely enjoyed while they are in season (maybe six weeks).I grew up eating onions and can't think of any reason not to cook with them. What would life be without onions?!
