I used canned refried beans also. When I used to make chili, I made it from scratch with dried beans.

I was raised on a lot of red beans and other types, so I like any recipe that has beans in it. I even like bean burritos made from canned beans if I don't have homemade (easy to please!).

Jerri, I cooked both pinto and red kidney beans for the chili. It was a long process as you know, so I used to make a pretty big batch!

Hi Jeri...been on vacation so I'm a little late here...am I correct in assuming that you basically described how to make refried beans in the bean burrito recipe? For a long time I have been looking for a recipe for refried beans and could never find one (okay, I haven't really looked that hard), so thanks for that! The stuff from the can is never as good as what you get from a restaurant. Any ideas on how to get Mexican rice that tastes authentic? I've tried every box and can in the store, and none of it tastes right.

Hi Elizabeth. Hope your vacation was fun.

My version of beans isn't really refried beans, as I don't fry them with grease, which is what you do with refried beans. You would make them just as I did only use lard, then mash and fry them with more lard to make refried beans. My recipe is a healthier version.

You've got me on Mexican rice. I have never found a recipe that tastes authentic.

Readers, do you have a recipe?

Living so close to the Mexican border, I have to love Mexican food, as well as a lot of the Tex/Mex foods we have. I really love cheese enchiladas with lots of onions. smile Also love chips and hot sauce!

Cinco de Mayo isn't far away and these sound like good recipes.

You are lucky to live in the southwest near such great Mexican food. It really is so much better than what we get in our state. I love to eat authentic Mexican food every chance I get, which isn't often. Maybe that's why I like it so much!
