Welcome Chris to Suite101. I've already subscribed to A Chef's Kitchen and look forward to some great articles in the coming weeks.

Have you heard of J&W's new program for students with a BS? They call it "Garnish your Degree." It's a one-year culinary arts program for people like me who already have a BS degree. Mine is in dietetics, so I don't have classic training. The program is only available in Denver right now.

What type of restaurant do you work in? My employment is on the other side of the house -- institutional food service. But writing -- and especially food writing -- brings many more rewards to me now after 30 years in the industry. Who knows, maybe I'm the next Craig or James (sorry, I've got to get ahold of my self!)?

There's at least one other food professional on Suite101. He's Andrew Orr at http://www.suite101.com/welcome.cfm/food... . Andrew writes more about the technical and management side of things, but his articles are informative.
