Plow Disk Cooking

» chilibill - Cleaning Plow Disks In West Texas and Mexico I have eaten some great BBQ side dishes and fried fish prepared in cleaned-up plow disks. The centers are welded closed and they are buffed to a shine. They are heavy steel and hold heat well. I was so impressed I recently purchased one and am trying to cure it much like I would cast iron and I am using lard instead of oil. My problem is it never seems to get clean. I have heated, oiled and washed the disk several times and the surface appears to be shiny clean , but I still get what appears to be rust or dirt on my paper towels when I wipe out the heated lard.

I have been cooking with one for a long time. I don't usually have a problem with any discoloration when wiping out the disc. Maybe the disc hasn't been seasoned enough. Try using it several times to fry potatoes or something like that. I also have the seasoning and cleaning instructions, history of the disks, recipes, and anything else you can think of.
