Weird Cajun Foods I Won't EatRead the article this discussion is about

» bbleigh - Hoghead Cheese and Grits The very first thing I wanted when I stepped off the plane after six years overseas was Hogshead cheese and grits. I think I ate it every morning for a week. But I only like it from a certain place and wouldn't touch the stuff at others.Being born and raised Cajun I have to agree with some of your items on the list. I'll eat white boudin but never red. Alligator is just awful. I have tried it several times and I just can't bring myself to eat it. "Taste like chicken"----Not so! Now cracklins and coffee I learned from my dad. I think most Cajun people like salty fired foods for breakfast and stay away from the sweeter foods. I can't do andouille or tasso nor grillades either. I love reading your articles. Thanks Paula. Most people have long misassociated "Cajun" food with overly hot spicy concoctions. That isn't what it is about at all. Sure many of us like Hot food but dumping in gobs of red pepper does not make it "Cajun". I guess we have some of the evils of TV to blame for that. Cajun cooking is about the combination of flavors and techniques. If you can't make a roux you can't cook Cajun food plain and simple. If you can't smother okra, you can't cook Cajun food. We smother most of our vegetables. From Okra to Eggplant to Mirlitons we smother it. Meats like tasso, andouille, and seafood enhance the flavors of our dishes. The cayenne pepper is just an extra kick. Cajun cuisine has long been misunderstood by people. No Cajun cook in her right mind would have to "research" this article. We learn it from our mothers and their mothers mothers. We stir our pots constantly, we smell, we taste, and we create as we go along. There aren't many Cajun cooks who ever use a recipe or measure anything. My grandma used to make a stew with tripe and potatoes. I thought she called that booyea (bouille) but must have been a similar name. I won't eat tripe in any form -- not even the Mexican Menudo. I also won't nutra rat, possum, or road kill. And I don't like sucking crawfish heads. So much for the old saying "Cajuns will eat anything".
