Aida, wonderful article. I've tried and loved everything you mentioned. Taboula is my particular favorite. I had to learn to make it myself, as I can't find it in a takeout menu anywhere here! I'm curious about less well known dishes. I would love to try something new if you have any suggestions.

Thanks! You know what?....I was REALLY hungry after looking through all those fantastic cook books and writing the article. Well, you sound like you've sampled quite a bit of Arabic food! I'm not sure if you have any Arabic cook books but let me recommend one of the best I've seen so far. It's called "From the Lands of Figs and Olives" by Habeeb Salloum and James Peters. It has over 300 recipes, great pictures, and even tells you which country the dish originates from.

Also, I just added two links for Arabic recipes, under the News and Information section. You can find lots of great recipes online to try out there. Some recipes I can recommend?....try Chicken Turnover (Maklooba). It's an easy to make rice, chicken and vegetable dish. I also like Musakhan which is chicken, onions, pine nuts and spices baked on bread. The spice called "sumak" in that recipe is really what makes it taste so good. Also, one of those links has a recipe for Samboosak (Saudi Samboosek is what its called on the website). That's also really good. Any of the stuffed vegetable dishes are also really good (rice and beef or lamb stuffed zucchini or eggplant). Okay.....two more that I'm not sure if you've tried. Baba Ghanooj which is an eggplant dip prepared and eaten like hummus. And also try Cucumber and Yogurt salad. I think you can find all of these recipes on those links I added.

Now I'm starving! ;-) My sister and I made Baba Ghanooj (sp?) some time ago for a dinner party and loved it. Ate it with slices of pita bread. Yum. Actually, it came from a vegetarian cookbook and was called Tunisian Eggplant Appetizer, but we were told it was basically the same. The other recipes sound great, I'm going to look for them.

We lived in the Gulf Region (Bahrain and the UAE) for the past few years and have recently moved back to the States. We used to get a sauce called Toom. It was very garlicky and delicious! We were told that it was potato based. We would love to have the recipe for this wonderful sauce. Thank you.

Hi. About the recipe for "toom", I checked a few Arabic cookbooks and found a recipe for a garlic sauce. However, none of them contain potato. The term "toom" actually just means "garlic." I'm going to give you the recipe that I found, although its not quite what you were looking for. If I do come across any recipe with pototoes in it in the future, I will post it here. Here's the simple recipe for garlic sauce:

Blend the following ingredients in a blender or food processor until the ingredients are mashed into a smooth paste: 4 cloves of garlic, 1/2 cup olive oil, 1/4 cup lemon juice, 1/4 tsp salt , and a dash of cayenne.

1 tablespoon mayonnaise
1 tablespoon olive oil
1 small potato -- boiled, peeled

I was in Bahrain about 10 years ago and I had a dish that was chicken in some kind of yogurt/cucumber (maybe) sauce wrapped in flat bread. It was great. I cannot remember what it was called. Do you know what it is?
