I didn't know about the dried peas, beans, whatever, but I do know that Southerners had to resort to grinding acorns along the way. . .Yick!

As an avid coffee lover myself, I am always teasing my father and step-mother, who somehow subsist on Food Lion brand from day to day (I think a 5 pound can costs about $3.00) about their 'ground acorns and dirt.' Shudder--absolutely not drinkable!

Too much is bad for you. They drank enough boiled water to stay alive if possible. You should think about the latrines up stream if you think the coffee was bad.

I am doing a project on exactally the same thing -what they ate during the Civil War, and how diet contributed to disease being the leading cause of death. Could you let me know what resources you found to help you with this, ASAP...please?
