Surrounded by the sea, the islands in the Caribbean enjoy a bountiful supply of fish and shellfish, but the cuisines of the Dominican Republic, Puerto, and Cuba feature much more than seafood on the menu. Pork is one of the most popular meats throughout the region, and beans, rice, and corn are staples at the dinner table. Sofrito, a mix of garlic, onions, bell pepper, and, often, tomatoes sauteed in olive oil, forms the base of many Caribbean dishes, and tropical fruits such as mango, papaya, plantains, and soursops are also common ingredients. Caribbean cuisine is typically milder than the spicy fare found in many other areas of Latin America. Favorite spices and herbs include cumin, oregano, anise, annatto, and culantro. And the abundance of sugarcane makes the Caribbean Latin America's sweet tooth.
