To speed your guests through the buffet line, don't overburden them. Make their job simpler, by keeping the flatware off of the buffet.
Keep a good supply of flatware wrapped in napkins, on the table (for a sit-down meal) or scattered throughout the party space (for a stand-up meal). Make sure that you have more flatware than you need, so that your guests won't have to search for that last set!
