The dog days of summer are here and this classic zucchini nut bread recipe is one that the whole family will enjoy!
This recipe that has been in my family for years. I started making this when the kids were little and now my kids are making it for their kids! When we opened the bakery, we knew this Zucchini Bread Recipe would be on the menu. We made it in very large batches, wrapped them in cellophane bags and put a label on them. They were a big hit!
I think the reason it was so good, was because we didn't skimp on ingredients. We used King Arthur unbleached flour, unrefined sugar, quality pecans or walnuts, delicious chocolate chips and free range chicken eggs if we could lay our hands on them...get it? I felt good supporting King Arthur Flour because they were local. They're located in Norwich Vermont, not too far from where we lived! More on them in another post!
Zucchini, Zucchini, Zucchini!
It all started years ago when I planted some zucchini. Not just some zucchini, but 12 plants! Do you have any idea how much one zucchini plant produces, let alone 12? At first it was exciting. Look, my first zucchini! Then I had 3 or 4 get big enough to pick, until the heavens opened up and I was deluged with zucchini! I had zucchini ripening all at once and I had to do something with them. And that's how the Best Zucchini Bread in the world was invented!
So, now that I've tempted you beyond your control, you'll just have to try my zucchini bread recipe. Take my advice and add some nuts or better yet, nuts and chocolate chips. You're gonna love it!
