Yummy Sweet Potato Fries

They are raw sweet potato fries. At my Cost Co anyway they are in that big fridge that holds all the produce. They looked like cut up carrots in a large clear bag but I was pleasantly surprised that they were sweet potatoes. For dinner tonight I bought one of those rotisserie chickens and baked the raw fries with a little spices and olive oil. It was so easy and they were a big hit! It was a super easy dinner.

I took a little bit of a gamble because the bag is quite large. I was think though, Sweet potatoes are a great way to sneak a little extra beta carotene in the diet. I realized that even if this idea of a huge bag of sweet potato fries is a tad strange, it was a good idea and could make adding sweet potatoes to more dishes easier. I am for anything that can make eating healthy easier that is for sure!

I will be adding the sweet potatoes to soups, eating them raw with a little hummus, bake them (of course), and adding them to stir fry for a little sweetness. They could also be baked with a little cinnamon and sugar then added to a small cup of vanilla yogurt for a yummy dessert.

So next time you are at Cost Co see if you can find the big bag a raw sweet potato fries and maybe you can make you family a fan of this versatile and healthy food.
