This soup is one I use myself. Soup is a great option for lunch because often lunch time is rushed and unless a food is convenient will not make the cut. A soup that you can make ahead, that tastes good and easy to reheat is a great option to keep you on a healthy eating plan. I heard that a diet that has too many variations in food choices can contribute to over eating. Eating a similar soup daily can help. Plus, if it packed with veggies, it will be high in fiber, low in fat, and calories. All of these things are useful when trying to maintain weight. For a little variety, had different options on the side. I mention a few of them in the recipe.
A good food plan would be to start with the smoothie for breakfast and the soup for lunch with something on the side two snacks and a sensible dinner. This really makes eating healthy very simple.
