Zucchini Recipes

It's zucchini season! I have to say I just love summer. Not the heat, mind you (I'm not a big fan of sweating), but the delicious abundance of good fruit and vegetables.

And what's more abundant in summer than zucchini? There are a million ways to serve this versatile vegetable. Here are some of my favorites:

• Zucchini Pancakes -- So tasty and so versatile. Serve these savory fritters for breakfast, lunch or dinner.
• Savory Zucchini Tart -- Adapted from one of Rachel Ray's recipes, this zucchini recipe isn't the quickest, but it is darned tasty.
• Zucchini Pizza -- A unique zucchini-crusted pizza adapted from the Moosewood Cookbook.
• Oven Fried Zucchini -- Lots of flavor, far less fat than traditional zucchini fries.
• Chocolate Zucchini Brownies -- Rich and chocolately, these brownies make a delightful summer dessert.
