Weeknight Dinner Ideas

Got the mid-week dinner blahs? Don't know what to make? Or don't feel like cooking at all?

I hear ya. When I'm busy with work, and the kids have a million activities, I look for quick and easy recipes I can pull together with ingredients I'm likely to already have on hand. Here are six of my favorites:

  • Turkey Calzones: Refrigerated pizza dough makes this a snap to put together, and they're always a favorite with the kids.
  • Shrimp Quesadillas -- Super fast and super nutritious. Be sure to use good-quality sea salt.
  • Meaty Panzanella -- A hearty twist on the Italian favorite -- and you don't even have to cook!
  • Chili Dog Casserole -- Just five ingredients and you have a meal!
  • Baked Chicken and Mushrooms -- A fast and delicious way to make any night of the week special.
  • Shrimp Salad -- Light and refreshing combination of roasted shrimp, baby spinach and orzo pasta.
