When I was a kid, I hated vegetables. I was blessed with a mother who knew the importance of healthy eating, and she served green vegetables at every meal.
Sadly, she knew little about cooking. So if she read that salt was bad for you, she avoided it completely. I mean completely. She would not add salt to anything. Needless to say, we all looked forward to eating out.
It wasn't until much later that I discovered just how much flavor a little salt and olive oil could add to fresh vegetables, like green beans and broccoli.
For years, I used kosher salt to flavor my recipes, knowing that a little kosher salt adds a lot of flavor, enabling me to use less of it than if I used regular table salt.
