My 5 Favorite Summer Desserts

When the weather's hot, the last thing I want to do is spend hours in the kitchen making dessert. These cool and refreshing recipes are perfect for the summer, and they'll keep your waistline slim, too!

  • Chocolate Strawberry Tarts -- Two flavors that were born to be together, and this no-bake recipe is so easy, the kids can do it.
  • Carrot Cake Smoothies -- Tastes like the real thing, but chock full of vitamins, calcium, fiber and protein. And it's low fat, too.
  • All Natural Frozen Key Lime Pie -- Light, tart and refreshing, this pie has a tropical twist, thanks to coconut in the crust and pineapple juice in the filling. The filling has a surprise ingredient that makes it extra healthy and extra yummy, too!
  • Chocolate Covered Strawberries -- Who doesn't love these? And the dark chocolate offers an antioxidant boost, too.
  • Mint Chocolate Chip Frozen Yogurt -- Minty cool, this frozen yogurt is a weird combination of Greek yogurt, spinach and dark chocolate chips. Sounds odd, but it's uniquely tasty.
