The kids are back to school, summer is almost over and everyone is busy, which means it's the perfect time to organize your cooking. I'm a big fan of make ahead meals.
But most freezer meal recipes are old-fashioned and boring. Not these five recipes! They're my go-to favorites when I'm in a rush and still want good food that tastes awesome.
1. Asian Beef Egg Rolls -- Don't let the name mislead you. These egg rolls are a satisfying main course. Elegant and surprisingly easy, they're a sure-fire hit and they're healthy, too.
2. Salmon Patties -- Easy, healthy and tasty. These salmon cakes can be frozen before cooking. Then just thaw and cook as directed.
3. Bean Soup with Hot Dogs -- Hearty, tasty, freezes well and a sure-fire hit with the kids. Serve it with Italian bread made in your bread machine.
4. Meatloaf with Vegetable Relish -- Adapted from Tyler Florence's classic recipe. If you want to freeze it, shape the meatloaf and wrap it tightly in plastic wrap and a plastic freezer bag, then freeze it before cooking. Bake for 1-1/2 to 2 hours, checking for doneness with a meat thermometer. Freeze the relish mixture separately. Thaw, warm and serve on top.
5. Vegetarian Chili -- Super healthy, easy and delicious. Serve it fresh, or freeze and then thaw completely in the fridge before reheating. Either way, it's a winner.
