Easy Picnic Desserts

Normally, I prefer ice cream, frozen pies and smoothies for dessert in the summer, but these don't work well when I'm bringing dessert to a pot luck barbecue or picnic.

For picnics, you need take-and-go food that travels well and doesn't need to be kept cold. Here are some of my favorite crowd-pleasing desserts for picnics and other summer celebrations:

• Chocolate Chip Shortbread Cookies -- My all-time favorite chocolate-chip cookie recipe.
• Peanut Butter Blossoms -- They couldn't be easier or tastier!
• Oatmeal Raisin Cookies -- Whole wheat and silken tofu give these cookies an extra boost of fiber and protein.
