Easy Dinner Recipes

If you want to lose weight or just eat healthier, cooking is a great way to do it. Cooking not only lets you control what goes into your food (e.g., how much salt, fat, sugar, etc.), it also allows you to control portions, too.

But after a busy work day, the last thing most of us feel like doing is cooking. We want to have something that takes less time to make than it takes to order a pizza. Here are six healthy recipes that fit the bill:

  • Chicken Marsala -- This fast and easy recipe can be made even faster if you buy chicken scaloppine (thin chicken breast cutlets) and pre-sliced mushrooms.
  • Baked Chicken and Mushrooms -- Five minutes of prep time and 15 minutes (or less) to bake is all you need for this chicken recipe.
  • Easy Chicken Pot Pie -- A terrific way to use leftover rotisserie chicken breast.
  • Shrimp Salad with Orzo -- This roasted shrimp salad recipe comes together in just minutes, and it's a refreshingly light meal when the weather is warm.
  • Baked Spaghetti a la Pizza -- Although this dish has to bake for more than a half hour, there's so little prep work involved, you can just throw it together, pop it in the oven and relax in the backyard while you wait for it to cook.
  • Chili Dog Casserole -- This kid-friendly recipe is packed with protein, fiber, calcium and iron.
