Lo Bok is also called Chinese Radish and makes a wonderful simple soup. Just peel it, cut it up, and toss it in a pot of water. In minutes you have both nourishing cooked radishes as well as a tasty broth. If you like, try adding ground ginger, a bit of soy sauce or even a handful of noodles. I think it tastes just great as is.
